Picking Peaches

Last Sunday I had the opportunity to go pick peaches at a farm north of Memphis.  It was a great day to be outside and we had a lot of fun! After returning home with about 40 peaches... I realized I had some baking, freezing and cooking to do! Hopefully you find some of these recipes just as delicious as I did!


Peach Cobbler
I made this the other night for three hungry boys and needless to say it was demolished! This recipe is from my cousin's family cookbook.  So all credit goes to the Weaver family!

2 large peaches, peeled and sliced
1 1/2 cups of sugar, divided
1/2 cup of butter, melted
1 cup of flour
2 teaspoons of baking powder
1/4 teaspoon of salt
Dash of ground nutmeg
3/4 cup milk

Preheat oven to 375 degrees.
In a large bowl combine, peaches and 3/4 cup of sugar. Set aside, Pour butter into an 8" square baking pan.  In a medium bowl, combine flour, baking powder, salt, nutmeg and remaining 3/4 cup of sugar.  Stir in milk just until combined.  Pour over butter. Top with the peaches. Bake at 375 for 45-50 minutes or until gold brown. 

I served it with vanilla ice cream.  Perfect!!!

Note: I used skim milk and next time may try to alter some of the sugar and butter to reduce some calories.  


Blueberry Peach Pie
I downloaded this new app for ipad called "Foodily".  Within minutes... I am addicted.  Disclaimer: do not look at this app when you are hungry!  I ran across this recipe that sounded delicious and a must try with some of my many peaches I have left.  It is from the Cheeky Kitchen

Pie crust
1 cup sugar
2/3 cup all-purpose flour
1 Tbsp vanilla
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1/8 tsp ground allspice
5 cups sliced frozen peaches
1 cup fresh blueberries
1 Tbsp butter
milk
cinnamon-sugar

In a large bowl, combine sugar, flour, vanilla, cinnamon and allspice.  Add the peaches and blueberries; toss until coated with flour mixture.
Roll out pie crust and place into the bottom of a pie plate.  Pour the filling into the prepared crust. Place little dabs of butter all over the fruit. Roll out remaining crust, cut into long strips, carefully weave together to create a lattice. Place lattice crust over the top of the pie. Brush crust with milk; sprinkle with cinnamon-sugar.
Bake at 400 degrees for 50-60 minutes or until crust is golden brown.  Cool completely before serving.

1 banana
1 peach
6 oz lowfat peach yogurt
1/4 cup orange juice
1 tsp honey
1 cup small ice cubes

Blend and Enjoy!!

Dietitian Day!

Happy Registered Dietitian Day!

I am excited to officially celebrate my first Registered Dietitian Day! It has been a great journey over the last year by finishing my internship at the VA Medical Center here in Memphis and then beginning my career in dietetics as the Meals on Wheels dietitian at MIFA. I look forward to finishing my master's in the late spring and seeing where my career continues to lead me. Have a wonderful "dietitian" day!
