I had no idea what to make for dinner tonight so I researched a few different recipes and decided to mix up a recipe of my own! It was delicious and very light.
2 chicken breasts, shredded
1 1/4 cup orzo
1 cup grape tomatoes
1 1/2 cup spinach
1 tsp oregano
2 T fresh basil
(could add red onion or red bell pepper)
Goat cheese or feta cheese
1 T olive oil
2 T olive oil and vinegar salad dressing
1/8 tsp salt
1/8 tsp black pepper
Prepare orzo according to package directions. Combine pasta, chicken and remaining ingredients through fresh basil.
In a separate bowl combine olive oil, salad dressing, salt and pepper. Drizzle vinegar mixture over pasta mixture. Top with crumbled feta/goat cheese. Enjoy!
